Beer-Simmered Bratwurst with Onions

- 5 links bratwurst (or mild Italian sausage), about 19 oz
- 1 (10 oz) package sliced fresh bell peppers and onions
- 1 (12 oz) can beer (or 1 ½ cups water)
- 5 Bakery hot dog buns
- 10 teaspoons deli-style mustard
Steps
- Preheat large sauté pan on medium-high 2–3 minutes. Place bratwurst in pan; cook 4–6 minutes, turning often, until browned. Add peppers and onions; cook and stir 2 minutes.
- Add beer and bring to a boil. Reduce heat to medium-low; cover and simmer 15–20 minutes until bratwurst is 160°F.
- Slice buns in half lengthwise, leaving 1/2-inch uncut. Spread 2 teaspoons mustard in each bun; top with bratwurst and ½ cup vegetables. Serve.
