Chicken Avocado Burgers

Ingredients

  • 1 large zucchini squash
  • 1 ½ lb ground chicken (or ground turkey)
  • 1 cup crumbled feta cheese
  • 1 tablespoon fresh oregano
  • ½ cup sliced fresh green onions
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ¾ cup plain bread crumbs
  • ¼ cup liquid egg whites
  • 3 teaspoons canola oil, divided
  • 1 small red onion
  • 1 medium tomato
  • 1 Hass avocado
  • 8 Bakery Kaiser rolls

Steps

  1. Grate zucchini and pat dry with paper towels. Combine in large bowl: chicken, feta, oregano, green onions, zucchini, salt, pepper, bread crumbs, and egg whites; mix until just combined. Shape mixture into 8 burger patties (wash hands); chill 30 minutes.
  2. Preheat large, nonstick sauté pan on medium 2–3 minutes. Place 1 ½ teaspoons oil in pan; add 4 patties and cook 5–6 minutes on each side until 165°F. Repeat with remaining 1 ½ teaspoons oil and 4 patties.
  3. Slice red onion and tomato thinly. Halve avocado, scoop out flesh, and slice thinly. Place burgers on buns; top with red onions, tomatoes, and avocados. Serve.
