Spicy-Sweet Shrimp Panzanella

Preheat oven to 400°F. Line baking sheet with foil.

Zest lime (1 teaspoon) and juice (1 tablespoon).

Baja Shrimp Tacos

Preheat oven to 325°F (for taco shells). Chop cilantro, then combine with mayonnaise in large bowl. Zest 1 lime (1 teaspoon), then juice both limes (2 tablespoons); add zest and juice to mayonnaise mixture. Add coleslaw mix and toss to coat; set aside.

Combine ranch dressing and shrimp; toss to coat. Place fry mix in medium bowl, then dip shrimp in fry mix (in batches) until coated (wash hands).

Preheat large sauté pan on medium-high 3–4 minutes. Place oil in pan, then add shrimp; cook 3–4 minutes on each side until coating is golden and shrimp are opaque . Remove from pan and drain on paper towels.

Prepare hard and soft taco shells following package instructions (omit sauce and seasoning). Halve avocado, remove pit and flesh, and slice flesh thinly. Divide avocados, shrimp, and coleslaw evenly among taco shells; serve.

Maryland-Style Crab Cakes

Preheat oven to 400°F. Coat baking sheet with spray. Chop parsley. Juice one-half lemon (2 teaspoons); cut remaining half into 4 wedges. Drain crab meat and remove any pieces of shell (wash hands).

Whisk in medium bowl: egg, mayonnaise, parsley, seasoning, lemon juice, and mustard until blended. Fold in crab meat and bread crumbs.

Form mixture into 8 rounds and place on baking sheet. Flatten slightly (wash hands) and coat tops with spray. Bake 10–12 minutes until tops are golden and centers are 145°F. Serve with lemon wedges.

Grilled Chili-Lime Salmon

Preheat grill (or grill pan) on medium. Chop garlic finely. Juice 1 lime (2 teaspoons); cut remaining lime into 4 wedges. Combine all ingredients (except salmon and lime wedges).

Coat salmon with spice mixture (wash hands). Grill salmon 3–4 minutes on each side until centers of fillets flake easily and are 145°F. Serve with lime wedges.

Teriyaki-Grilled Tuna Steak

Preheat grill (or grill pan) on medium-high. Brush fish with oil and place on grill (wash hands); grill 1–2 minutes on each side (for medium-rare) until seared.

Brush with teriyaki sauce and season with pepper.
